Method of preparation
In a pan heat the oil and add the leek.
Add the celery and carrot and sauté for 2 minutes.
Add the pumpkin and then the boiling water.
While the vegetables are cooking, beat the egg with the chopped coriander leaves.
As soon as the vegetables are soft, remove from the heat and beat with a mixer or in a blender along with a little of the cooking water.
Mix this “papinha” with the beaten egg.
Heat a skillet over low heat, melt the butter and add the egg.
When the egg begins to cook, stir vigorously, but do not over-fry, as the scrambled should be moist and creamy.
