NGREDIENTS

Kibbeh Dough

4 cups bulgur wheat

2 ½ cups soy base

6 cloves of garlic, crushed

1 medium onion, grated

Sea salt and chopped herbs to taste

 

For the Filling

3 tablespoons oil

1 medium onion, chopped

1 medium tomato, chopped

1 cup medium-sized textured soy protein (TSP), soaked in 2 cups of water for 15 minutes

150g ricotta cheese

1 cup chopped olives

1 tablespoon soy sauce

2 tablespoons olive oil

Sea salt and chopped herbs to taste

 

 

For the Soy Base

1 ½ liters of water for cooking

1 ½ cups peeled and split organic soybeans

1 teaspoon baking soda

1 tablespoon oil

 

For the Soy Base

In a pot, place all the ingredients for the soy base and cook over medium heat for 40 minutes. Then, drain the water and transfer the base to a blender. Add 1 cup of water and blend until smooth. Place the base in a kitchen towel and squeeze to remove excess liquid. Set aside.

 

For the Kibbeh Dough

After hydrating and draining the bulgur wheat, mix it with the soy base and the remaining ingredients. Set aside.

For the Filling

In a pan, heat the oil and sauté the garlic, onion, and tomato. Add the textured soy protein (TSP), salt, and soy sauce, and sauté for a few minutes, stirring constantly. Turn off the heat and add the ricotta cheese, olives, olive oil, and chopped herbs.

Assembly

Divide the dough in half. Spread a layer of dough, a layer of filling, and cover with the remaining dough. Bake in a preheated oven at 240°C (475°F) for approximately 30 minutes, at medium-high heat.
