Creamy broccoli soup


It is possible to bring more green and flavor to cold days.

This recipe for creamy broccoli soup, besides being very easy to prepare, is capable of warming the hearts of the whole family, from the little ones to the more experienced!

Ingredients:
1 bunch of broccoli, only the florets
1 chopped onion
2 cloves of garlic, crushed
1 leek, only the stem
1 liter of homemade vegetable broth
2 tablespoons of butter
Salt and pepper to taste

Instructions:
In a deep pot, melt the butter and add the onion, leek, and garlic. Sauté until golden.
Add the broccoli florets (reserve some for garnish) and the vegetable broth. Cook until the broccoli is tender.
Using a blender or an immersion blender, puree the soup until creamy.
In another frying pan, sauté the reserved broccoli florets in butter.
Serve the soup and garnish each bowl with the sautéed broccoli florets in the center.
