Carrot muffin


A recipe that will delight everyone, leaving the whole family eager and with water in their mouths!

Ingredients
1 cup of all-purpose flour
1/2 cup of rolled oats
2 cups of cooked and mashed carrots
1/4 cup of olive oil
1/4 cup of milk


2 eggs
1/2 diced onion
1 cup of ricotta cheese
1/2 cup of grated Parmesan cheese
Dried oregano or fine herbs to taste
Salt and pepper to taste
1 teaspoon of baking powder

Instructions
In a bowl, mash the ricotta cheese with a fork. Add the oregano, season with salt and pepper to taste, and set aside.
In a blender, blend the remaining ingredients until you have a smooth batter.
Mix the batter with the seasoned ricotta cheese.
Grease the muffin pans with butter and flour.
Preheat the oven to 180ºC (350ºF).
Distribute the batter into the muffin pans.
Bake for approximately 30 minutes, or until the muffins are golden brown.
Remove from the oven, let them cool for a bit, and unmold.
