Mushroom Risotto with Brown Rice

Ingredients:

1/2 cup of Brown Short-Grain Rice

1/2 cup of assorted grains of your choice (a mixture of Rolled Amaranth with a tablespoon of Whole Chia Seeds or Whole Flax Seeds)

1/2 cup of Quinoa

15g of dried mushrooms

1/2 cup of white wine

3 and 1/2 cups of water

3 and 1/2 teaspoons of butter

1/2 teaspoon of olive oil

1/2 cup of grated Parmesan cheese Chopped parsley to taste

Sea salt to taste

 

Instructions for Mushroom Risotto with Brown Rice:

  1. Soak the mushrooms in a little warm water for about 20 minutes. Then strain them and reserve the water.

  2. Chop the onion and set it aside. Heat the olive oil together with 1/2 teaspoon of butter and sauté the onion until it becomes soft. Add the rice, grains, and quinoa, stirring well. Pour in the water and the mushroom water.

  3. Cook for 20 minutes with the lid on. When it is almost dry, add the remaining butter, mushrooms, Parmesan cheese, and parsley. Gently stir and let the cheese melt.
