Scrambled Eggs for Baby
Scrambled eggs are a great option to introduce into your baby's diet.
Besides being quick and easy to prepare, they are a healthy choice for parents who want to offer a nutritious meal even on busy days.

Ingredients for Healthy Scrambled Eggs:
- 1 egg
1 tablespoon of chopped leeks - 1 tablespoon of chopped carrots
- 1 tablespoon of chopped celery
- 1/4 cup of chopped butternut squash
- 1 teaspoon of olive oil
- 1 cup of water or homemade vegetable broth
- 1 teaspoon of chopped cilantro
- 1 teaspoon of butter
Instructions:
In a small saucepan, heat the olive oil and add the leeks.
Add the celery and carrots, sautéing for about 2 minutes.
Add the butternut squash, followed by the boiling water.
While the vegetables cook, whisk the egg with the chopped cilantro leaves.
When the vegetables are tender, remove from heat and blend with an immersion blender or regular blender, using some of the cooking water.
Mix this "puree" with the beaten egg.
Heat a frying pan over low heat, melt the butter, and add the egg mixture.
Stir the egg vigorously until it begins to cook, but be careful not to overcook it, as scrambled eggs should be moist and creamy.
