Crust Ingredients (dessert base)
120g Traditional Seed Mix
200g Mixed Fruits
Preparation method:
Grind the seed mix with the mixed fruits until it forms a dough. Add a tablespoon of the filling mixture and mix until it becomes a homogeneous mass. Line a large mold or individual molds with the dough.
Filling Ingredients
150ml Agave Syrup
80g coconut oil
150ml Rice Biov Half a lemon
160g Seed and Nut Mix
Preparation method:
Soak the Seed and Nut Mix in warm water for one hour, then blend the fruits with the other ingredients. Place 1 tablespoon of the dough in the base, following the instructions above. Spread the filling over the base. Place the cheesecake in the freezer until set. Serve with the syrup, if desired.
Option for syrup:
Half a cup of Agave Syrup 1/4 cup of goji berries
1/4 cup of blueberries
Preparation method:
Mix the ingredients well and pour over the cheesecake when serving.
Why is this cheesecake nutritious?
The stars of this recipe are the Jasmine fruits. The Mixed Fruits is a natural snack that combines cranberries, blueberries, goji berries, dehydrated apples, and raisins without added preservatives. This combination is full of antioxidants, vitamin C, and vitamin E.
The Traditional Seed Mix is made with roasted soybeans, peeled sunflower and pumpkin seeds, cereal flakes, golden flaxseeds, whole quinoa grains, soluble natural fiber, and spinach powder. Without added sugar, this mixture is rich in fiber, proteins, minerals, and omega-3 and omega-6. It is also a source of folic acid and vitamin B5.
The vegan cheesecake features Jasmine Rice Biov, a lactose-free beverage and a natural source of calcium from seaweed. One cup of Rice Biov contains the same amount of calcium as a cup of cow's milk.
