Christmas cake
The night before preparation, place the dried fruit, orange and lemon zest and orange juice in a bowl.
Stir and leave in the refrigerator so that the berries absorb the juice.
On the day of preparation, preheat the oven to 160º and grease a round or pudding mold with butter and flour.
Beat the softened butter with the sugar in a mixer until well mixed… the more the merrier.
Add one egg at a time to the mixture with a little of the ground almonds.
Place the flour and baking powder next.
Add nuts and dried fruit. Mix well and place the dough in the pan.
Take it to the oven and bake for approximately 30 min.. Stick a toothpick in the cake, if it comes out clean it's ready. If not, leave it in the oven for a few more minutes.
Let the cake cool before unmolding. Decorate with fruits and nuts and serve!
