Codfish fritter for the little ones


This cod fritter recipe is super simple and versatile!

You can also try substituting it with fresh fish, such as salmon, or even prepare it with just vegetables. Don't miss out on trying it!

Ingredients:
1 cup of fresh or desalted shredded cod
1 chopped onion
1/2 cup of chopped red bell pepper
2 cups of cooked potatoes, mashed or passed through a potato ricer
2 eggs
1/2 cup of fine oat flakes
1 tablespoon of olive oil
Green herbs to taste

Instructions:
Preheat the oven to 180ºC (350ºF).
In a pan, heat the olive oil. Add the onion and bell pepper and sauté until the onion starts to become translucent.
Add the cod and continue sautéing for another 3 minutes.
Turn off the heat and set aside.
In a bowl, beat the eggs.
Add the sautéed cod, mashed or mashed potatoes, oat flakes, and green herbs.
Season with salt and pepper to taste, if desired.
Mix well and distribute the mixture into greased muffin cups.
Bake for approximately 30 minutes or until the fritters are golden brown.
Allow them to cool slightly, then remove from the cups. Serve!
