Pineapple and coconut squares

Degree of difficulty: Easy

Time: 1 hour
Servings: 12 people

Ingredients:

340 g of flour
250 g sugar
150 g powdered sugar
100 g butter
100 g grated coconut
8 Eggs
6 slices of pineapple in syrup
4 tablespoons coconut liqueur
2 tablespoons of milk
1 teaspoon baking powder
Lemon juice q.b.
margarine for greasing
flour for sprinkling

Instructions:

1. Turn on the oven at 180°C, grease a rectangular tray with margarine and sprinkle it with flour. In a bowl, beat the butter with the sugar and the yolks until you get a creamy mixture.

2. Grind the pineapple slices in a food processor or blender, place in a bowl, add 1 dl of the syrup itself and the coconut liqueur, mix well, add to the bowl with the butter mixture and beat a little more. Then add the flour, baking powder and grated coconut and beat again.

3. Separately, beat the egg whites until stiff and fold them into the previous mixture. Pour into the tray and bake for about 30 minutes. Check doneness with a toothpick, remove and let cool.

4. Mix the milk with the powdered sugar and a few drops of lemon juice, pour over the cake, let it dry, cut into cubes and serve decorated to taste or as you see in the photo.

pineapple delight

Time: 20 minutes
Servings: 4 people

Ingredients:

250 g Maria biscuits
125 g melted butter
1 can of condensed milk
1 can of pineapple
7 gelatin sheets
3 egg whites
4 dl of cream

Instructions:

1. Break the cookies into a bowl and grind them until they are finely grated. Add the butter, wrap and forge a tart. Soak the gelatine sheets, drain them and melt in the microwave without letting it boil.

2. Set aside 2 pineapple slices and crush the rest, place them in a bowl, add the condensed milk and mix until a homogeneous mixture is obtained.

3. Separately, beat the cream in a very firm whipped cream and add the pineapple mixture. Beat the egg whites until stiff and gently fold into the previous mixture with the gelatin sheets. Pour over the tart, smooth and refrigerate for 2 hours. Remove, decorate with the reserved pineapple slices and serve.

 


Pineapple Cake

Degree of difficulty: Easy
Meal cost: Economic
Time: 1 hour
Servings: 6 people

Ingredients:

300 g pineapple in syrup
250 g of flour
150 g sugar
75 g butter
4 eggs
3 dl pineapple syrup
2 dl of milk
2 dl liquid caramel
1 teaspoon baking powder
Powdered sugar for sprinkling

Instructions:

1. Pour the eggs into a bowl, add the milk and sugar and beat. Then add the flour and baking powder and beat again. Melt the butter in the microwave and add to the preparation, stirring until a homogeneous mixture is obtained.

2. Brush a round mold with the liquid caramel and cover the bottom with the drained pineapple slices. Pour the previous mixture on top and bake in a preheated oven at 170°C for about 40 minutes or until cooked through.

3. Stick a toothpick to check the doneness, remove, let it cool, then drizzle with the pineapple syrup and let it rest for a while. Unmold and serve sprinkled with powdered sugar.

pineapple pie

Time: 35 minutes + cooling time
Servings: 12 units

Ingredients:

1 small can of pineapple
1 can of condensed milk
100 g crushed reine sticks
4 dl of cream
12 sheets of colorless gelatin

Instructions:

1. To prepare this pineapple pie recipe, cut the pineapple into pieces. Reserve the pineapple and syrup. Soak the gelatine sheets in water. Then heat a little of the pineapple syrup, add the drained gelatine leaves and dissolve them in the syrup. Let it cool down a bit. Pour the cream into a bowl and beat the whipped cream very firmly, gradually adding the condensed milk.

2. Add some of the pineapple pieces and the dissolved gelatin sheets, without turning off the mixer.

3. In a mold with a removable base, place a layer of crushed reine sticks.

4. Pour the cream mixture on top and cover with another layer of crushed toothpicks, as you can see in the photo. Take it to the cold to solidify, unmold and serve decorated to taste, for example, with the remaining pineapple pieces.
