jackfruit meat

Today I bring you a recipe highly appreciated by vegetarians and vegans: jackfruit meat! When still green, jackfruit doesn't have a distinct flavor or aroma, which makes it ideal for use in fillings for coxinhas, pies, and sandwiches. Its name comes from its texture, which closely resembles shredded meat. It is a perfect alternative for those who don't consume animal meat or for those who like to explore new flavors. How about giving it a try? Let's go!

Ingredients

  • 1 green jackfruit
  • 3 cloves of garlic, minced
  • 2 onions, chopped
  • 1 tablespoon of olive oil
  • 1 tablespoon of curry powder
  • 2 tablespoons of green herbs (e.g., parsley, cilantro) Juice of
  • 1 lemon Salt, to taste Black pepper, to taste Oil for greasing the knife

Instructions

  • Start by washing the jackfruit thoroughly to remove any dirt. Then, to prevent the sap from sticking and making cleaning difficult later on, apply a little oil to your hands, the knife, and the cutting board.
  • With the clean jackfruit, cut it into pieces. Remove and discard the seeds.
  • Place the jackfruit pieces in a pressure cooker and cover them with enough water to submerge the entire fruit. Cook under pressure for about 40 minutes to soften the jackfruit.
  • After the cooking time, turn off the heat and let the pressure release naturally. Then, wait until the jackfruit cools enough to handle.
  • Once the jackfruit has cooled down, remove the skin and separate the pulp. Shred the jackfruit pulp using a fork or your hands, creating strands that resemble the texture of shredded meat. Set aside the shredded jackfruit.
  • In a pan, heat a little olive oil and sauté the onion and garlic until golden and aromatic.
  • Add the shredded jackfruit to the pan along with the remaining ingredients from the recipe. This can include your preferred seasonings, such as pepper, salt, cumin, among others. Cook for about 5 minutes, gently stirring to incorporate the flavors.
  • After the cooking time, the shredded jackfruit meat will be ready to serve. Use it in various ways, such as a filling for sandwiches, pies, tacos, or as a side dish with rice and salads.

Enjoy this delicious and versatile option of shredded meat made with jackfruit.

With its unique texture and flavor, it will certainly please everyone!
