Today, I'm going to share a perfect recipe for those seeking a tasty and versatile option: shredded beef, also known as "carne louca" in many places. It's an excellent choice to have on hand as it can be frozen in small portions and used in various ways.

This shredded beef is great for preparing nutritious sandwiches and can also be used to stuff pies, turnovers, pancakes, tapioca, pies, soups, as well as being a delicious accompaniment to rice and pasta. One of my favorite ways to enjoy this beef is in a sandwich with generous portions of lettuce - it's simply delicious! I recommend you give it a try!

Ingredients

  • 1 kg beef (such as sirloin, rump, chuck, or tenderloin)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced 2 garlic cloves
  • 3 ripe tomatoes, diced
  • 4 bay leaves To taste
  • parsley and scallions To taste
  • salt

 

Instructions

  1. In a pressure cooker, sauté the onion and garlic in olive oil.
  2. Add the remaining ingredients and cover with water, filling approximately 2/3 of the volume of the meat. Make sure not to add too much water to avoid a watery sauce.
  3. Let it cook for 40 minutes.
  4. Turn off the heat and allow the pressure to release naturally.
  5. Remove the meat from the pot and shred it while still hot.
  6. Then, return the shredded meat to the cooking sauce and let it thicken over low heat.
