Carrot cake recipe with syrup

Ingredients:

3 eggs

½ cup of oat Biov

2 medium-sized grated carrots

8 tablespoons of oat bran

2 tablespoons of cornstarch

6 tablespoons of skimmed milk powder

2 tablespoons of brown sugar

1 tablespoon of Quinoa grains

1 tablespoon of baking powder

 

 

Instructions:

Blend the eggs in a blender until frothy. Add the sugar, half of the grated carrots, oat bran, cornstarch, brown sugar, skimmed milk powder, baking powder, and milk. Blend well in the blender. Transfer the mixture to a bowl and add the other half of the grated carrots and quinoa. Mix well. Pour into a greased baking pan with coconut oil and bake in a preheated oven at medium heat for about 30 minutes.

Frosting

Ingredients:

1 tablespoon of coconut oil

1 cup of your preferred plant-based milk (oat Biov or Rice with Almond Biov)

1 level tablespoon of cornstarch

1 tablespoon of pure cocoa powder

1 level tablespoon of brown sugar

 

Instructions:

In a saucepan, combine the milk, cornstarch, and cocoa powder, and mix until well dissolved. Add the coconut oil and cook the mixture over low heat, stirring constantly with a wire whisk until thickened.
