Whole Wheat Banana and Raisin Cake

Ingredients

Cake
• 3 eggs
• 3 cups of brown sugar
• 3 cups of fine whole wheat flour
• 2 tablespoons of soy extract diluted in 1 cup of water
• 1 cup of raisins
• 1 cup of soy extract cream
• 2 tablespoons of honey
• 3 tablespoons of ground cinnamon
• 2 teaspoons of baking powder
• 6 ripe bananas

Soy extract cream
• ½ cup of water
• 2 tablespoons of soy extract
• 1 cup of oil

Instructions

Soy extract cream:
In a blender, combine the water and soy extract. Blend while gradually adding the oil. Keep the cream in a closed container in the refrigerator.

Cake:

Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form and set aside.
In another bowl, place the yolks and soy extract cream. Mix and gradually add the brown sugar, until a creamy consistency is achieved.
Next, add the honey, soy extract, whole wheat flour, ground cinnamon, and 3 sliced bananas to the mixture. Mix well.
Add the baking powder and the beaten egg whites, gently folding them into the batter.
Pour the batter into a greased pan, top with the remaining sliced bananas, and sprinkle with cinnamon and brown sugar.
Preheat the oven and bake at medium-high heat (230ºC/450ºF) for approximately 50 minutes.
