Orange Sweet Potato Soup
This sweet potato soup was a hit in our home! In the United States, it is orange, while in Brazil, we find white and purple varieties. Whether colorful or not, this recipe remains very delicious.

Servings: Serves the whole family
Ingredients:
- 2 peeled and chopped orange sweet potatoes (you can substitute with white sweet potatoes, carrots, butternut squash, or a combination of these vegetables)
- 1 chopped onion 1 chopped celery stalk 1 cup of chopped roasted chicken (a great idea to use up leftovers from lunch)
- 1 cup of orange juice
- 2 cloves of chopped garlic
- 1 teaspoon of finely chopped rosemary
- 2 tablespoons of olive oil
- 1.5 liters of boiling water or chicken vegetable broth Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot.
- Add the onion and celery.
- Sauté for about 3 minutes until the onion becomes translucent.
- Add the garlic and finely chopped rosemary.
- When the garlic starts to brown, add the chicken and then the sweet potatoes.
- Stir for a while so that the vegetables absorb the flavors of the seasonings.
- Add the orange juice and let it simmer.
- Then, add the boiling water and cook over medium heat for 20 minutes.
- Season with salt and pepper to taste.
- Turn off the heat and serve.
