Orange Sweet Potato Soup


This sweet potato soup was a hit in our home! In the United States, it is orange, while in Brazil, we find white and purple varieties. Whether colorful or not, this recipe remains very delicious.

Servings: Serves the whole family

Ingredients:

  • 2 peeled and chopped orange sweet potatoes (you can substitute with white sweet potatoes, carrots, butternut squash, or a combination of these vegetables)
  • 1 chopped onion 1 chopped celery stalk 1 cup of chopped roasted chicken (a great idea to use up leftovers from lunch)
  • 1 cup of orange juice
  • 2 cloves of chopped garlic
  • 1 teaspoon of finely chopped rosemary
  • 2 tablespoons of olive oil
  • 1.5 liters of boiling water or chicken vegetable broth Salt and pepper to taste

 

Instructions:

  1. Heat the olive oil in a large pot.
  2. Add the onion and celery.
  3. Sauté for about 3 minutes until the onion becomes translucent.
  4. Add the garlic and finely chopped rosemary.
  5. When the garlic starts to brown, add the chicken and then the sweet potatoes.
  6. Stir for a while so that the vegetables absorb the flavors of the seasonings.
  7. Add the orange juice and let it simmer.
  8. Then, add the boiling water and cook over medium heat for 20 minutes.
  9. Season with salt and pepper to taste.
  10. Turn off the heat and serve.
