Blueberry Muffins


For snack time, lunchboxes, dessert, or breakfast, muffins are always delicious and a hit with kids.

How about inviting them to participate in preparing these delicious treats? It will be a fun and tasty activity to enjoy as a family.

Ingredients
1/2 cup softened butter
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup fine oatmeal
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk
2 cups blueberries

Instructions
Preheat the oven to 180°C (350°F).
In a bowl, combine the softened butter and brown sugar. Mix well using a spoon or a mixer until you have a smooth mixture.
Add the eggs one at a time, beating well after each addition. Then, add the vanilla extract and mix again.
In another bowl, mix the all-purpose flour, whole wheat flour, oatmeal, salt, and baking powder.
Gradually add the dry ingredients to the butter and sugar mixture, alternating with the milk. Stir until you have a uniform batter.
Mash half of the blueberries with a fork and add them to the batter. Then, add the remaining whole blueberries and mix gently.
Distribute the batter into greased and floured muffin cups, filling each one about 2/3 full.
Bake in the preheated oven for approximately 30 minutes, or until the muffins are golden and firm to the touch.
Remove from the oven and let the muffins cool slightly before removing them from the cups and serving.
