shrimp soup

Ingredients:

400 g of shrimp crumb
1 homemade bread with 800 g
2 gems
4 cloves of garlic
1 L of milk
1 seafood broth
0.5 dl olive oil
2 tablespoons brandy
whole prawns
chopped coriander q.s.
salt and chilli q.b.

Instructions:

1. Cut the bread into pieces and place them in a bowl. Heat the milk with the seafood broth and bring to a boil, then remove and drizzle over the bread.

2. Peel and wash the garlic cloves and chop them finely. Heat a pan with the oil, cloves, salt and chilli and let it cook well. Add the defrosted shrimp kernels and let it cook well. Adjust the seasoning, add the chopped coriander, drizzle with the brandy and finally add the drained bread. Stir very well until smooth.

3. Cook the prawns separately in water seasoned with salt and chilli. Pour the soup into an earthenware dish and serve garnished with the peeled cooked shrimp, the egg yolk and more chopped coriander.

farinheira bread soup

Ingredients:

1 flour
400 g of Alentejo or homemade bread
5 peeled tomatoes
1 onion
3 cloves of garlic
4 eggs
1 dl olive oil
1 bay leaf
1 sprig of chopped parsley or coriander
Salt q.s.

Instructions:

1. Cut the bread into pieces, place them in a bowl, add a little warm water and cover. Remove the skin from the farinheira and cut it into small pieces.

2. Peel the onion and garlic cloves, chop everything, put it in a saucepan, add the olive oil and the bay leaf, bring to a boil and cook until the onion is soft. Add the chopped peeled tomatoes and the farinheira pieces, mix and cook over low heat for 5 minutes.

3. Drain the bread with your hands, add it to the pan, stir until a homogeneous mixture is obtained, adjust the salt, add the parsley (or coriander) and place in a ceramic or pyrex tray. Open the eggs on top, bake in a preheated oven at 180ºC until the eggs are cooked to taste, remove and serve hot.

cod soup

Time: 20 minutes
Servings: 4 people

Ingredients:

1 large homemade bread (approx. 800 g)
2 soaked cod fillets
4 cloves of garlic
2 gems
1 dl olive oil
1 seafood bouillon cube
7 dl water
Coriander q.s.
Salt and pepper q.b.

Instructions:

1. Pour the water into a microwaveable bowl, add the seafood broth and microwave at 900 watts for 6 minutes or until the water starts to boil. Then add the cod and turn on another 5 minutes at the same power. Remove from the microwave, reserve the water, let the cod cool down, then discard the skins and bones and shred it.

2. Remove the crust from the bread, cut the core into pieces, place them in the bowl with the cod cooking water and let it soak well. Peel and wash the garlic cloves, place them in a microwave safe container, add the oil and turn on 3 minutes at 900 watts.

3. Remove, add the bread, the shredded cod and a little chopped coriander, wrap and microwave again at the same power for 1 minute, stirring occasionally. Remove, rectify the seasonings, add the egg yolks and stir well just before serving.
