INGREDIENTES

• 6 bolas sorvete light de creme ou baunilha

• 30 morangos

• 6 copos leite desnatado



FOR THE DOUGH

• 4 tablespoons extra virgin olive oil
• 2 tablespoons crushed Golden Flaxseed Jasmine
• 1 tablespoon bread yeast
• 1 ½ cups whole wheat flour
• 1 cup all-purpose flour
• 1 tablespoon wheat germ
• 1 teaspoon plain yogurt
• ½ cup milk
• 1 cup warm water
• Atlantis Sea Salt to taste

FOR THE FILLING

• 1 cup diced tomatoes
• 300 g ground beef
• ½ cup diced eggplant
• 1 cup water
• 1 tablespoon chopped olives
• 2 tablespoons extra virgin olive oil
• 3 tablespoons chopped onion
• Atlantis Sea Salt to taste

Instructions

In a bowl, mix the yeast, 2 tablespoons of wheat flour, warm water, and milk. Let it ferment for about 10 minutes.
Then add the olive oil, salt, plain yogurt, whole wheat flour, all-purpose flour, wheat germ, and crushed golden flaxseed. Mix well until you have a homogeneous dough.
Let the dough rest for 15 minutes while you prepare the filling.
In a pan, heat the extra virgin olive oil and lightly sauté the onion. Then add the ground beef and cook. Add the tomatoes, eggplant, salt, and water. Finally, add the chopped olives.
Take small portions of the dough, flatten it in your hands, and fill it with the prepared filling.
Shape the dough into an esfiha shape and place the pastries on a greased and floured baking sheet. Sprinkle golden or brown flaxseed from Jasmine on top of the esfihas.
Preheat the oven and bake at medium temperature for 30 minutes, or until golden brown.
